As the first roasted goose restaurant in Sham Tseng, Chan Kee Roasted Goose, or Sham Tseng Chan Kee has been maintaining its leading place for over 40 years. Since the first Chan Kee Roasted Goose Restaurant was established in 1979, Sham Tseng Chan Kee has continued to develop. Now Sham Tseng Chan Kee has stores in Hong Kong, China and Macau.

Hong Kong's “Siu-mei,” Cantonese spit-roasted meat dishes, is a popular gourmet. Among the numerous “Siu-mei,” roasted goose carries a history of traditional Hong Kong cuisines. Over half a century, Sham Tseng has been famous for roasted goose, while “Sham Tseng Chan Kee” is one big name in the district.



Goose contains a variety of essential amino-acids that is close to the composition of the human body. This low-fat meat is rich in whole protein and unsaturated fatty acids. Sham Tseng Chan Kee discovered the benefits of goose and focused on the production of the most delicious roast goose 40 years ago. It is not surprising that goose was also listed as one of the key “green food” developments in the 21th century by The Food and Agriculture Organization of the United Nations (FAO).



INSISTENCE OF TRADITIONS OVER DECADES


In order to make the best roasted goose, Sham Tseng Chan Kee has been insisting its traditional culinary for three generations. The very first step is to pick a goose at its best quality. Geese at 90 days old are chosen and fed under observation. To preserve their freshness and quality, the whole production (slaughter, marinating, drying and roasting) should be completed within 16 hours. After marinated in its descended secret recipe, geese are placed in a roaster filled with flint-stones. This method can convert the goose fat into a lubricated layer to create crispy skin and juicy meat.


Sham Tseng Chan Kee marked a milestone today since its establishment in the 50s as a tiny stall selling roasted geese in Sham Tseng. As time goes by, the area became populated by ‘roasted goose’ restaurants, which led Sham Tseng to be the ‘Hometown of Roasted Goose’.
